Start up your VM that you created earlier and then install Ubuntu Server normally and follow the installation wizard, except for few things :
Network connections :
Select you interface and press enter, then edit IPv4 and Manual to choose a static IP address for you server :
Disable DHCP
Set Static IP address
Storage Configuration :
Deselect "Set up this disk as an LVM group"
Disable LVM group
SSH Server
Install OpenSSH Server
Install SSH Server
Continue until the the end and reboot the server, you can press escape on boot menu of proxmox, then stop the VM, and go to Hardware, select CD/DVD Drive, and "Do not use any media"

First connection
That that your server is installed, you can connect to it using credentials you set on installation.
The first thing to do now is the traditionnal :
QEMU Guest Agent
Applicable only if you are running proxmox (or another hypervisor that uses qemu)
Then install the QEMU Guest Agent with :
Then come to your proxmox interface, select you VM, then Options>QEMU Guest Agent and activate it :

Then shutdown and reboot your server with :
You're now ready to install docker and docker compose !
